Description
An easy, cheesy chicken fajita casserole packed with tender chicken, colorful peppers, and creamy melted cheese. Perfect for busy weeknights or family dinners.
Ingredients
- 1.5 lbs chicken breast, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 2 tbsp olive oil
- 1 packet taco seasoning
- Juice of 1 lime
- Salt and pepper to taste
Instructions
1. Preheat oven to 375°F and grease a baking dish
2. Slice chicken, peppers, and onion
3. Heat olive oil in a skillet and cook chicken until lightly browned
4. Add peppers and onion and cook for about 5 minutes until softened
5. Stir in taco seasoning and lime juice and toss to coat
6. In a bowl, mix cream cheese and sour cream until smooth
7. Transfer chicken mixture to the baking dish and spread cream mixture on top
8. Sprinkle evenly with shredded cheddar cheese
9. Bake for 20–25 minutes until golden and bubbly
10. Garnish if desired and serve hot
Notes
Add sliced jalapeños for extra heat
Swap chicken for shrimp or steak strips for variation
Leftovers store well and make a great lunch the next day
