Description
A sweet and savory grilled cheese made with tangy blueberry lemon thyme jam, melted mozzarella and white cheddar, and crispy buttered sourdough bread finished with flaky sea salt.
Ingredients
- 1 pint fresh blueberries
- 1/4 cup white sugar
- Juice of 1 lemon
- 1 small bundle lemon thyme, tied with kitchen twine
- 8 slices sourdough bread (about 1/4-inch thick)
- 4 oz mozzarella cheese, shredded
- 4 oz white cheddar cheese, grated
- 4 tbsp unsalted butter
- Flaky sea salt, for finishing
- Extra lemon thyme leaves (optional garnish)
Instructions
1. Combine blueberries, sugar, lemon juice, and the bundled lemon thyme in a saucepan over medium-high heat and bring to a boil.
2. Reduce heat to medium-low and simmer about 10 minutes, then lower heat to low and cook another 10 minutes, stirring often until thickened.
3. Remove and discard the thyme bundle and let the blueberry jam cool for about 10 minutes.
4. Lay out four slices of sourdough bread and spread a generous layer of the blueberry jam over each slice.
5. Top the jam with shredded white cheddar and mozzarella, then place the remaining slices of bread on top to form sandwiches.
6. Heat a skillet over medium heat and melt 2 tablespoons of butter.
7. Place two sandwiches in the skillet, cover, and cook for 2–3 minutes until the bread is golden.
8. Flip the sandwiches and cook another 2–3 minutes until the cheese is melted and the bread is crisp.
9. Transfer cooked sandwiches to a board, melt the remaining butter in the skillet, and repeat with the remaining sandwiches.
10. Cut sandwiches in half and finish with flaky sea salt and optional fresh lemon thyme leaves before serving.
Notes
Be generous with the blueberry jam for a balanced sweet and tangy flavor.
Adjust the skillet heat as needed to prevent the bread from burning before the cheese melts.
A cast iron skillet helps create an evenly crisp and golden crust.
The blueberry jam can be made ahead and refrigerated for up to several days.
