Description

This Honey BBQ Chicken Rice recipe blends sweet honey and smoky BBQ flavors with tender chicken and fluffy rice for a hearty, family-friendly meal ready in under 30 minutes.

Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce (your choice of flavor)
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley for garnish

Instructions

1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.

2. Heat oil in a large skillet over medium heat and sear chicken for 3–4 minutes per side until golden brown. Remove from the pan.

3. Add uncooked rice to the same pan and toast for 1–2 minutes, stirring to prevent sticking.

4. Pour in chicken broth, BBQ sauce, and honey. Stir to combine.

5. Return chicken to the pan, nestling it into the rice mixture. Bring to a gentle boil, then reduce heat to low and cover.

6. Simmer for 15 minutes until rice is tender and chicken is fully cooked.

7. Add mixed vegetables, cover again, and cook an additional 5 minutes.

8. Fluff the rice with a fork, garnish with chopped green onions or parsley, and serve hot.

Notes

Use chicken thighs for extra juiciness or breasts for a leaner option.

To make gluten-free, ensure your BBQ sauce is certified gluten-free.

Soak rice for 30 minutes before cooking for fluffier results.

Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
