Lemon Raspberry Swirl Bars are a bright, refreshing dessert that blends tangy lemon flavor with sweet raspberries in a soft, buttery bar.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries or frozen, thawed
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup powdered sugar
Instructions
1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
2. In a medium bowl, combine the flour, granulated sugar, and salt. Stir in the melted butter, egg, and vanilla extract until well combined.
3. Pour the mixture into the prepared baking dish and spread it evenly.
4. In another bowl, mash the raspberries with a fork until slightly chunky. Stir in the lemon juice and lemon zest.
5. Drop spoonfuls of the raspberry mixture over the batter in the baking dish.
6. Use a knife or toothpick to gently swirl the raspberry mixture into the batter to create a marbled effect.
7. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
8. Allow the bars to cool in the pan for about 10 minutes, then remove and cool completely on a wire rack. Dust with powdered sugar before cutting into squares.
Notes
For extra lemon flavor, add 1 teaspoon of lemon extract to the batter.
You can substitute blueberries for raspberries for a different flavor variation.
These bars taste especially refreshing when chilled before serving.
