Lemon Raspberry Swirl Bars are a bright and refreshing dessert combining tangy lemon with sweet raspberries for a beautiful marbled treat that’s perfect for gatherings or an everyday sweet snack.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries (or frozen, thawed)
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup powdered sugar (for dusting)
Instructions
1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
2. In a medium bowl, combine the flour, granulated sugar, and salt. Stir in the melted butter, egg, and vanilla extract until well combined.
3. Pour the mixture into the prepared baking dish and spread it evenly.
4. In another bowl, mash the raspberries with a fork until slightly chunky. Stir in the lemon juice and lemon zest.
5. Drop spoonfuls of the raspberry mixture over the batter in the baking dish and use a knife or toothpick to gently swirl it into the batter to create a marbled effect.
6. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
7. Let the bars cool in the pan for about 10 minutes, then lift them out using the parchment paper and allow them to cool completely on a wire rack.
8. Once cooled, dust the top with powdered sugar and cut into squares.
Notes
For an extra citrus boost, add 1 teaspoon of lemon extract to the batter.
You can substitute blueberries for raspberries for a different but equally delicious flavor.
These bars taste especially refreshing when chilled before serving.
