Description

A warm, nostalgic Southern banana cobbler dessert with sweet caramelized bananas and a soft golden batter that bakes into a gooey, comforting treat perfect with ice cream.

Ingredients

Scale
  • 5 ripe bananas, sliced
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup self-rising flour
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon ground nutmeg (optional)
  • Vanilla ice cream (optional topping)
  • Whipped cream (optional topping)
  • Chopped pecans or walnuts (optional topping)
  • Caramel drizzle (optional topping)

Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a baking dish with butter or nonstick spray.

2. In a large bowl combine sliced bananas, sugar, melted butter, vanilla extract, cinnamon, and salt. Stir gently until bananas are well coated and set aside.

3. In another bowl whisk together self-rising flour, milk, sugar, and nutmeg until just combined. Do not overmix; a few small lumps are fine.

4. Pour the batter evenly into the prepared baking dish without stirring.

5. Spoon the banana mixture evenly over the batter and do not mix the layers.

6. Bake on the center rack for 45–50 minutes until the top is golden brown and edges are bubbly.

7. Remove from oven and let rest for about 10 minutes before serving so the filling can set slightly.

Notes

Use very ripe bananas for the best sweetness and banana flavor.

Do not stir the batter and banana layers after assembling; the batter rises around the fruit during baking to create the cobbler texture.

Bake until the top is deeply golden brown with lightly crisp edges for the best flavor.
