Description

A quick and healthy no-bake treat made with just three simple ingredients, these apricot coconut balls are naturally sweet, refreshing, and perfect for snacking or dessert.


Ingredients

Scale
  • 220g dried apricots
  • 65g desiccated coconut (plus extra for coating)
  • Zest of 1 orange
  • 1 tbsp water or orange juice

Instructions

1. Add all ingredients to a food processor and blend until a smooth, sticky mixture forms.

2. Divide the mixture into 11–12 equal portions and roll into balls.

3. Roll each ball in extra desiccated coconut to coat evenly.

4. Place in the refrigerator and chill for at least 30 minutes before serving.


Notes

Store in an airtight container in the refrigerator for up to 1 week.

If the mixture is too dry, add a little more liquid; if too wet, add more coconut.

These are naturally sweet with no added sugar and are suitable for vegan diets.
