It is a perfect blend of convenience and fresh, wholesome ingredients, making it an ideal choice for busy weeknights when you crave something hearty, nourishing, and flavorful without the complexity of traditional long-simmered stocks.
Ingredients
3 tablespoons avocado oil
4 boneless skinless chicken thighs, sliced
1 teaspoon coarse kosher salt
2 shallots, finely chopped
5 ounces sliced shiitake mushrooms
6 cups low-sodium chicken broth
2 star anise
1 tablespoon fresh ginger, minced
2 tablespoons tamari or soy sauce
1 tablespoon miso paste
3 heads baby bok choy, quartered
3 packages instant ramen noodles (flavor packets discarded)
Optional garnish: sliced green onions, sesame seeds, or chili oil
Instructions
Heat 1 tablespoon of oil in a large pot or Dutch oven over medium-high heat.
Season chicken with salt and sear until golden and cooked through, then remove and set aside.
Add remaining oil to the pot, then sauté shallots and shiitake mushrooms until softened.
Stir in the ginger and cook for 1 minute until fragrant.
Pour in the chicken broth, add the star anise, and bring to a gentle simmer.
Whisk in the tamari and miso paste until smooth.
Add the bok choy and cook for 2-3 minutes until the stems are tender-crisp.
Add the ramen noodles to the broth and cook according to package instructions (usually 3 minutes).
Stir the chicken back into the pot.
Ladle into bowls and serve immediately, topped with optional garnishes.
Notes
Use tamari instead of soy sauce to keep the dish gluten-free. If you cannot find fresh ramen noodles, instant ramen bricks work perfectly; just be sure to discard the seasoning packets provided in the package to control the sodium content. Store leftovers in an airtight container for up to 2 days, though noodles may soften significantly.
