Ingredients
1 tablespoon extra virgin olive oil
1 large yellow onion, finely minced
0.5 tablespoon garlic, finely minced
6 stalks celery, rough cut
4 large carrots, rough cut
1 can (15 oz) diced tomatoes
1 teaspoon salt and black pepper
12 cups chicken broth (halal/no alcohol)
2 cups cooked shredded chicken breast
1 cup pastina pasta (stars or acini de pepe)
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion, garlic, celery, and carrots; sauté until softened, about 5-7 minutes.
Pour in the chicken broth and the diced tomatoes; bring to a simmer.
Add the pastina pasta and cook for 8-10 minutes, or until the pasta is tender.
Stir in the shredded chicken and cook until heated through.
Season with salt and pepper to taste and serve warm.
Notes
You can add extra greens like spinach or kale during the last two minutes of cooking. If storing, keep the pasta separate from the broth to prevent it from becoming too soft, as pastina absorbs liquid quickly.
