A flavorful and zesty dairy-free Mexican street corn salad with fresh herbs and a hint of lime.
Ingredients

- 4 cups corn
- 3 tablespoons dairy-free mayonnaise
- 2 tablespoons lime juice
- 1/4 cup chopped cilantro
- 1 teaspoon chili powder
- 3 tablespoons olive oil
- 1/2 cup chopped red onion
Instructions
1. Place corn in a large frying pan. Coat with olive oil and season with chili powder. Sauté over medium-high heat.
2. Remove corn from the frying pan once it begins to brown and place in a large bowl.
3. Add chopped red onion, dairy-free mayonnaise, lime juice, and cilantro. Mix well until combined.
4. Serve warm or chilled as desired.
Notes
This dish can be served hot or cold.
For extra flavor, add a pinch of smoked paprika or a dash of hot sauce.
Use fresh or frozen corn depending on availability.
