A refreshing and vibrant watermelon salad with cucumber, feta, and lime-marinated red onions, perfect for a light summer dish.
Ingredients
- For the marinated red onion:
- 1 cup red onion, sliced
- 3 tbsp fresh lime juice
- For the main salad:
- 8 oz feta cheese, crumbled
- 1/2 cup fresh cilantro, chopped
- 3 cups English cucumber, diced
- 15 cups watermelon, cubed
- Sea salt, to taste
- Freshly cracked black pepper, to taste
Instructions
1. Slice the red onion and place it in a small bowl. Pour lime juice over the onion and let it marinate while preparing the rest of the salad.
2. In a large bowl, gently combine watermelon cubes, diced cucumber, crumbled feta, and chopped cilantro.
3. Season the mixture with freshly cracked black pepper and gently toss to combine.
4. Add the marinated red onion along with its lime juice to the salad and mix well.
5. Just before serving, season with sea salt to taste and toss lightly.
6. Serve immediately and enjoy this refreshing salad.
Notes
Use fresh, ripe watermelon for the best flavor.
Do not add salt until just before serving to prevent the watermelon from releasing too much juice.
You can add mint leaves for an extra layer of freshness.
