Description
This easy Parmesan bow tie pasta salad is made with a zesty homemade Italian dressing, fresh vegetables, olives, and herbs for a refreshing and flavorful side dish.
Ingredients
- 8 oz bowtie pasta (farfalle)
- 3/4 cup cherry tomatoes, halved
- 3/4 cup English cucumber, diced
- 3/4 cup red bell pepper, diced
- 1/4 cup grated parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1/4 cup sliced black olives, drained
- 1/4 cup sliced Spanish olives with pimento, drained
- 1/4 cup red onion, finely diced
- 1/3 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tsp honey (optional)
Instructions
1. Cook bowtie pasta in salted boiling water for about 10 minutes until al dente, stirring occasionally. Drain and rinse under cold water, then set aside to drain היט.
2. In a large mixing bowl, whisk together olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, black pepper, and honey until well combined.
3. Dice the cucumber, red bell pepper, and red onion into small pieces. Halve the cherry tomatoes.
4. Add the chopped vegetables, olives, and parsley to the dressing and mix well.
5. Add the cooled pasta and grated parmesan cheese to the bowl and toss until everything is evenly coated.
6. Chill the pasta salad until ready to serve, then toss again before serving to redistribute the dressing.
Notes
For best flavor, chill for at least 1 hour before serving.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Stir before serving as the dressing may settle at the bottom.
