Ingredients
2 medium sweet potatoes
1 bunch kale, stemmed and torn
1 tablespoon olive oil
1 medium yellow or white onion, finely diced
1 pound ground turkey
4 cloves fresh garlic, minced
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 teaspoon dried thyme
8 ounces Gruyère cheese, freshly shredded
Instructions
Microwave sweet potatoes until fork-tender, then peel and cube them into bite-sized pieces.
Heat olive oil in a large skillet over medium-high heat.
Add the diced onion and sauté until translucent and fragrant.
Add the ground turkey to the skillet and cook until browned, breaking it apart with a wooden spoon.
Stir in the minced garlic, salt, pepper, and dried thyme.
Add the cooked sweet potato cubes and kale to the skillet, stirring until the kale is wilted.
Top with the shredded Gruyère cheese and cover the skillet for 1-2 minutes until the cheese is melted and bubbly.
Remove from heat and serve hot.
Notes
