Ingredients
- 3 cups frozen hash browns
- 2 tablespoons olive oil
- 4 large eggs
- ½ cup shredded cheddar cheese
- ½ cup cooked breakfast sausage or bacon (optional)
- ¼ cup diced onion
- ¼ cup diced bell pepper
- Salt to taste
- Black pepper to taste
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add frozen hash browns and cook until golden and crispy, stirring occasionally.
3. Add diced onion and bell pepper, cooking until softened.
4. Push hash browns to one side and crack eggs into the skillet.
5. Gently scramble eggs and combine with hash browns and vegetables.
6. Stir in cooked sausage or bacon if using.
7. Sprinkle shredded cheddar cheese over the mixture and allow it to melt.
8. Season with salt and black pepper to taste.
9. Serve warm in bowls.
