A fresh and protein-packed Greek salad with tender marinated chicken, crisp vegetables, and a zesty homemade dressing.
Ingredients
- 6 cups chopped lettuce
- 1 (8 oz) Greek marinated chicken breast
- 1/4 cup Kalamata olives (pitted)
- 1/4 cup crumbled feta cheese
- 2 cups sliced tomatoes
- 1 cup sliced cucumber
- 1/2 tsp black pepper
- 1 tsp sugar
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 tsp kosher salt
- 2 tsp dried oregano
- 1 garlic clove, minced
Instructions
1. Add chopped lettuce to a large serving bowl or divide into individual bowls.
2. Arrange sliced chicken, tomatoes, cucumber, olives, and feta cheese on top of the lettuce.
3. In a small jar, combine olive oil, red wine vinegar, minced garlic, oregano, sugar, salt, and pepper.
4. Secure the lid and shake well until the dressing is fully emulsified.
5. Taste and adjust seasoning as needed.
6. Drizzle the dressing over the salad.
7. Toss gently to coat all ingredients evenly.
8. Serve immediately and enjoy.

Use high-quality feta cheese for the best creamy texture and flavor.
Freshly minced garlic enhances the dressing significantly.
You can substitute grilled chicken if marinated chicken is unavailable.
