Ingredients
- 1 cup orzo pasta
- 1 lb shrimp (peeled and deveined)
- 4 cups low-sodium chicken broth
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1/2 cup fresh parsley (chopped)
- 2 tbsp lemon juice
Instructions
1. Heat olive oil in a large pot over medium heat and sauté minced garlic until fragrant, about 1 minute.
2. Add shrimp and cook until pink and opaque, about 3-4 minutes.
3. Stir in orzo and chicken broth, bring to a gentle boil, then reduce heat and simmer for about 10 minutes until orzo is tender.
4. Remove from heat and stir in lemon juice and chopped parsley.
5. Serve warm, garnished with extra parsley if desired.
Notes
Use fresh or frozen shrimp that has been fully thawed and patted dry for best texture.
Adjust lemon juice to taste for more brightness.
You can substitute vegetable broth for a lighter flavor.
Add a sprinkle of grated Parmesan for extra richness if desired.
