1/3 cup unsalted butter
1/2 cup yellow onion, finely diced
1/2 cup fresh mushrooms, sliced
1 1/2 lbs fresh green beans, trimmed
2 cups chicken broth
1 can (10.5 oz) cream of mushroom soup
1 1/2 cups sharp cheddar cheese, shredded
3 cups French-fried onions


Instructions

Preheat your oven to 375°F (190°C).
Boil the fresh green beans in the chicken broth until crisp-tender, then drain.
In a skillet, melt the butter and sauté the diced onions and sliced mushrooms until softened.
In a large bowl, combine the cooked green beans, sautéed mushroom mixture, and cream of mushroom soup.
Stir in 1 cup of the shredded cheddar cheese and 1 cup of the French-fried onions.
Pour the mixture into a greased casserole dish.
Bake for 20 minutes until bubbly.
Top with the remaining 1/2 cup of cheese and 2 cups of French-fried onions.
Bake for an additional 5-8 minutes until the onions are golden brown.
