A sweet and savory pineapple chicken dish served over fluffy rice, perfect for a quick and flavorful meal.
Ingredients
- 1 lb (450 g) chicken breast or thighs, diced
- 1 tablespoon oil
- Salt and pepper to taste
- 2 cups cooked rice (white, jasmine, or brown)
- 1 cup pineapple chunks
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon grated ginger (optional)
- Green onions or sesame seeds for garnish
Instructions
1. Heat oil in a large skillet. Season chicken with salt and pepper and cook until golden and cooked through. Remove and set aside.
2. In a bowl, whisk pineapple juice, soy sauce, honey, cornstarch, garlic, and ginger.
3. Add pineapple chunks to the skillet, then pour in the sauce. Simmer until thickened.
4. Return chicken to the pan and toss until coated in sauce.
5. Spoon over warm rice and garnish with green onions or sesame seeds as desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Serve with steamed vegetables or a simple cucumber salad for a balanced meal.
You can substitute chicken with shrimp or tofu for variation.
