45 Bone-in chicken thighs
2 tsp Onion powder
2 tsp Garlic powder
1 tsp Smoked paprika
1 tsp Fresh thyme
2 tbsp Fresh rosemary, finely chopped
Salt and black pepper to taste
1 Red onion, sliced into half-moons
12 Honeycrisp apples, sliced into wedges
4 tbsp Salted butter
3/4 cup Non-alcoholic apple cider
1/2 cup Chicken broth


Instructions

Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry and rub them with onion powder, garlic powder, smoked paprika, thyme, and half of the rosemary.
Season generously with salt and pepper.
In an oven-safe skillet, melt 2 tablespoons of butter over medium-high heat and sear the chicken skin-side down until deep golden brown and crispy.
Remove the chicken from the pan. Add the red onion and apple wedges to the skillet, sautéing until slightly softened.
Pour in the apple cider and chicken broth, scraping up any browned bits from the pan.
Return the chicken to the skillet, skin-side up, and sprinkle with the remaining rosemary.
Transfer the skillet to the oven and roast for 20-25 minutes until the chicken is cooked through and the sauce has thickened.
Baste the chicken with the pan juices before serving.


Notes

Ensure you use bone-in, skin-on chicken for the best texture and flavor. If the sauce is too thin, you can simmer it on the stovetop for a few extra minutes after removing the chicken to reach your desired glaze consistency.
