Ingredients
1 pound green tomatillos, husked and blanched
4 tablespoons TABASCO brand Green Jalapeño Pepper Sauce
2 cloves garlic, blanched
1 red onion, cut into 1/2-inch rings
1 serrano pepper, grated
1/2 cup fresh cilantro, including stems and roots
1 teaspoon light agave nectar
1 tablespoon olive oil
1/2 Hass avocado
5-pound whole chicken
5 cloves garlic, crushed
1 bunch fresh thyme
1 bay leaf
3 tablespoons tomato paste
6 quarts filtered water
1 white onion, halved
Sea salt to taste
Instructions
In a large stockpot, combine the whole chicken, 5 crushed garlic cloves, thyme, bay leaf, tomato paste, white onion, and water. Simmer until the chicken is tender and falling off the bone.
Remove the chicken, shred the meat, and set aside. Strain the broth and keep it warm.
Char the red onion rings in a skillet until soft and caramelized.
In a blender, combine the blanched tomatillos, TABASCO Green Jalapeño Sauce, blanched garlic, charred red onion, serrano pepper, cilantro, agave nectar, olive oil, and avocado. Blend until smooth and velvety.
Pour the green puree into the chicken broth and simmer for 15 minutes to meld the flavors.
Stir in the shredded chicken and season with sea salt to taste.
Serve hot, garnished with your favorite toppings like crunchy tortilla strips, diced avocado, or fresh cilantro.
Notes
Ensure you blanch the tomatillos just until tender to maintain their bright green color. You can adjust the spice level by controlling the amount of grated serrano pepper used. Store leftovers in an airtight container in the refrigerator for up to 3 days.
