Description
An elevated take on the classic American comfort meal, this pot roast replaces spirits with a rich, malt-infused beef reduction to achieve deep, complex flavors. Featuring a tender, marbled beef rump braised to perfection with golden baby potatoes, fresh carrots, and button mushrooms, this one-pot wonder creates a succulent, melt-in-your-mouth experience perfect for busy family weeknights or Sunday gatherings.
Ingredients
2 ½ lb beef rump roast
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon granulated garlic
2 tablespoons olive oil
1 lb petite baby gold potatoes
1 lb baby carrots
8 oz button mushrooms, halved
1 cup beef stock
2 tablespoons malt extract (for non-alcoholic malty depth)
1 teaspoon Worcestershire sauce (ensure vegan/halal check)
2 sprigs fresh thyme
Instructions
Preheat your oven to 325°F (165°C).
Pat the beef roast dry and season evenly with salt, pepper, and granulated garlic.
Heat the olive oil in a large Dutch oven over medium-high heat and sear the beef on all sides until browned.
Remove the beef and add the potatoes, carrots, and mushrooms to the pot, sautéing for 3 minutes.
Return the beef to the pot, nestling it among the vegetables.
Whisk together the beef stock, malt extract, and Worcestershire sauce, then pour over the roast.
Add the thyme sprigs, cover with a tight-fitting lid, and transfer to the oven.
Braise for 3 to 3.5 hours, or until the beef is fork-tender and shreds easily.
Notes
Ensure all ingredients are verified as alcohol-free. The malt extract replicates the malty sweetness traditionally found in whiskey-based recipes. Store leftovers in an airtight container for up to 3 days in the refrigerator.
