Ingredients
1 tablespoon extra virgin olive oil
1 yellow onion, finely diced
3 garlic cloves, minced
1 (7-ounce) can mild green chiles
1 pound ground chicken
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 cans (15-ounce) Great Northern or Cannellini beans, rinsed and drained
3 cups chicken broth
Salt and black pepper to taste

Instructions
Heat the olive oil in a large pot over medium heat.
Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.

Transfer 1 cup of the beans and 1/2 cup of the broth to a blender and process until smooth.
Add the remaining beans, the remaining broth, and the pureed bean mixture into the pot.
